Apricot Flapjacks

These apricot flapjacks are so scrummy and a sneaky way of getting some fruit into your little ones, they will be devoured in no time! Not keen on dried apricots? Substitute them for sultanas, or nuts or even cranberries.

Cooking time: 30 minutes
Serving size: 20 portions

Ingredients

285g self-raising flour
400g oats (instant oats for fine texture, or rolled oats for coarse)
340g demerara sugar
3 tsp mixed spice
340g butter or margarine
200g canned apricots, well drained and chopped

Cooking Instructions

  1. Combine the flour, oats, sugar and spice

  2. Melt the butter / margarine and add to the mixture until crumbly consistency.

  3. Add the apricots to the mixture

  4. Put the mixture into a greased tin and smooth the top.

  5. Bake in a moderate oven (180°C or reg 5) for 30 minutes or until golden

  6. Allow to cool and cut into portions.
